Save millions of dollars by making your own pizza!!

Have you ever really sat back and thought about how much money you spend on pizza?
It is so easy to get really good at making a great pizza at home and once you get used to it
and comfortable you will never order out....well not never...you have to get out every now and then.....anyway I think that you have to make a decent pie or else this plan will not
work...but on a recent beach vacation everyone wanted pizza one night....from previous experience I knew they were about to fork out about $40 for 2 delivery pizzas.....I made my regular pizza recipe which follows below and everyone was quite pleased..total cost approximately.....$3.......for everything.....so here goes:


Recipe to make one 12" pizza

1 cup of room temperature water
1 Tbs. Instant Dry Yeast ( Buy from Costco $4 is a years supply the small packets are expensive)
1Tsp. Sugar
2 Cups of Bread Flour ( Only Use Bread Flour,many reasons but trust me,please)
Up to 1Tbs. Salt (Optional,I have made dozens of pies without salt)

1 Cup Pizza suace (Can be my favorite Dom Pepino,Ragu makes good sauce,or plain tomato sauce)
1-2 Cups of Shredded Mozzerella Cheese ( Provelone is also great or combine cheeses)
Any other meat toppings or veggies you would like...


* Please own a stand mixer and a pizza stone....if you do not already have these invest in
these items you will get paid back,I promise.

Put baking stone on a rack in the lower part of your oven and turn on bake 395-400 this
is recommended to preheat for one hour. I have done it for less than that but an hour is best.

Place water in the bowl and sprinkle in yeast and sugar...it should start to bloom in a minute or so......foams a little breaks apart and gets cloudy......add the 2 cups of flour and sprinkle you
salt on top of the dry flour,salt can kill yeast so it should be added this way only....start you mixer with dough hook installed at slow then move up to medium.....here is the secret that I found makes this really easy.....watch the dough stick to the bottom center of the bowl,this happens almost every time......add flour a tablespoon at a time until the hook just picks up this sticky wet dough in the bottom middle of the bowl,this is the main reason I found this recipe works everytime....most everyone I know feels that they cannot make the dough consistently so they
have given up trying.....please try this.....I make pizza at least once a week...anyway.....keep running the mixer kneading the dough for at least 5 minutes.....you can knead up to 10 minutes...
stop the mixer.....you can transfer dough to a bowl,cover and let rise for an hour,get out your
pizza peel,sprinkle it with cornmeal,shape your pie,top it with sauce and cheese etc.....slide it
onto the baking stone....IMPORTANT...throw an entire cup and a half of water on the oven floor
and close the oven and bake 17-20 minutes until the cheese is browning up...spotty brown is great.....here is what I do after the mixer stops.....I place a piece of parchment paper on the counter about 12" x 16" put vegetable oil on my left hand,I remove the dough hook with the dough attached,it is always attached to the hook,with my clean right hand,I work the dough ball off of the hook with my greases left hand onto the parment paper,I cover it with a bowl,I use a
large lid off of one of my pots,leave it for an hour.......after the time has elapsed I shape it into
a pizza of any shape I want to,this my pizza and it does not have to be round,most of mine are
nice ovals though........I then cover it and let it rise again up to one hour,an hour results in the best pie,if you only have 30 mins. it will work.......I spread my sauce,cheese,then toppings......
SECRET HINT......I then slide the pie off the counter and onto a pizza box I have saved and use the pizza box as a peel to slide the pie onto the stone so you do not have to own a pizza peel.....
I owned one but frankly I did not like the cornmeal stuck to the bottom of the pizza.......anyway
the little hints may seem small but they have helped me find a way to create a very acceptable
some say incredible,delicious,HOMEMADE PIZZA.....cost for a plain cheese about $1.00-$1.25
depends on how much cheese you use....what sauce you use....but really this a way to feed that
pizza craving we all get and save money.....I found that Dom Pepino pizza sauce is the best
tasting commercial sauce on the market,Ragu Pizza sauce in the jar is a long distance 2nd....
but it is widely available.....our local delivery place uses Dom Pepino...I can be coerced into sending you a can or ask Santa for a taste....another hint is the cheese is important,I have tried
the off brand cheapy on sale cheese and it does not work for me...I would say if you are in a gourmet mood get some buffalo milk mozzerella and have the best pie of your life,I found Kraft brand mozzerella woks really well,is easy to find,tasted great. Another hint...the reason your splash a cup and a half of water on the oven floor is it creates steam in your oven....this will
make your crust chewy as it will be crisp from baking on the hot stone it will be a little bit chewy
like the Papa Johns pizza we all know has that wonderful chewy crust.....think about it..to make bagels,and we know how chewy they are,they dump the rounds of dough in boiling water first
and then bake them into wonderful chewy consistency......I really hope you try this recipe....
if I convert only one of you into a home pizza maker than maybe it will be spread to someone else
and so on....I know this seems like a lot of work but you will feel so accomplished when you
bite into this pizza.....and I cannot tell you how great it feels when someone else eats it and really
says it is one of the best pizzas they have ever eaten....Enjoy!!!!!!!!!
